Here is how to prepare fish over a campfire:
Build the Perfect Fire
The key to cooking over a campfire is to create a great campfire. The first step is to gather firewood. Be sure that the wood is completely dry and chop it into smaller pieces. Smaller pieces of wood will make the fire easier to control. You can use cement blocks or iron bars to create a flat surface to place your cast iron skillet.
It is important to use a cast iron skillet because it evenly distributes the heat throughout the pan.
Prepare Fish
After you have filleted the fish, you can begin seasoning with your favorite spices. (Salt, pepper, lemon juice)
Be sure to evenly coat the pan in oil before placing it onto the fire. Allow the oil to heat in the pan for about a minute before adding the fish.
Next, carefully place the fish into the pan. Use tongs or a spatula to place them into the skillet. Allow the fish to fry on each side for about 4 minutes. Or until golden brown and slightly crispy on the edges.
Once the fish is done, take the pan off the fire then remove the fish from the pan. Place the fish on a paper towel to soak up any leftover oil.
